This yummy pumpkin soup recipe is the perfect meal to keep you going all autumn long.
1 Tablespoon of Olive Oil
1 Yellow onion, diced
2 Garlic Cloves, minced
1 Cup coconut milk- Try our Simple Plant Milk Recipe
1 Teaspoon Thyme
1 Teaspoon Ginger
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/2 Teaspoon Cayenne Pepper
1 ¼ cups Vegetable Broth
2 cups Organic Pumpkin Puree
1 Teaspoon of Roasted Pepitas
Instructions:
Heat one tablespoon of olive oil in a large pot. Add onion and garlic, cook until soft. Stir in thyme, ginger, salt, black and cayenne pepper. Add coconut milk and bring to a boil. Add vegetable broth and pumpkin puree and simmer until heated through. Transfer to a blender and puree until everything is combined. Serve and top with pepitas.
