Here’s a Valentine’s Day date idea that combines these two ideas: a healthy, plant-based delicious menu to share with your Valentine to celebrate that love sustains life.
First: A Simple Arugula Salad
- 2 cups of Arugula
- 1 cup of chopped Radicchio
- 2 tablespoons of Extra Virgin Olive Oil
- 2 tablespoons Balsamic Vinegar
- 2 tablespoons of Pistachios
Wash your arugula and dress your greens in one part olive oil and one-part balsamic vinegar. Top with radicchio and pistachios. Starting with a fibrous superfood like arugula and glucose balancing vinegar promotes satiety and stable glucose levels.
Main: Avocado Basil Pesto with Veggie or Gluten Free Noodles
- 1 cup of Fresh Basil
- ½ cup of Water
- 2 tablespoons of fresh Lemon Juice
- 1 ripe Avocado
- 2 cloves of Garlic
- Sea Salt to taste
Blend all ingredients in a blender or food processor until smooth. Then add to your favorite gluten free noodle or vegetable based “noodle” like spiralized zucchini or hearts of palm.
Dessert: Chocolate Covered Strawberries
- 1 cup Organic Strawberries
- ½ cup of your favorite Chocolate – we love Choc Zero
- 1 tablespoon of Coconut Oil
Wash your organic strawberries and pat dry. Melt chocolate with coconut oil over a double boil. Dip berries in the melted chocolate and let dry on a parchment paper lined baking sheet or plate. Keep refrigerated until ready to serve.
