Cashews are packed with iron, B-vitamins, Zinc, and they’re rich in magnesium which is important for your nervous system. These cashew butter bites are also blood sugar stable, an important part of keeping your hormones in check. Keep these bites in the fridge to hold you over between meals or even as a small after dinner treat.
1/2 Cup Cashew Butter
2 Tablespoons Melted Coconut Oil
1/4 Cup Almond Flour
I scoop of Protéine Verte
1/4 Cup Shredded Coconut
1 Teaspoon Cinnamon
1 Teaspoon Vanilla Extract
1/4 Cup Dried Cherries
1/4 Cup Chopped Cashews
For an optional Chocolate Drizzle:
1 Tablespoon Coconut Oil
1/4 Cup of Cacao Nibs
In a bowl, mix cashew butter, coconut oil, almond flour, Protéine Verte, coconut, cinnamon, vanilla until completely combined. Add water if the mixture is too dry. Fold in the cherries, and cashews. Using a tablespoon, scoop mixture and roll into balls then place on a parchment lined baking sheet.
Melt cacao nibs with coconut oil in a small saucepan then drizzle over the protein balls. Store the balls in an airtight container and keep in the refrigerator for up to a month.
