It’s officially fall, which seems like the right time to talk about the immune boosting star of the season – yes, apples are in peak season and there are many varietals to enjoy. Packed with healthy fibers, vitamin C, antioxidants, flavonoids, and other inflammation reducing properties, apples are easily at the top of our autumn favorites list.
This healthy morning staple tastes like a quiet fall morning and should be prepped ahead of time, bringing you peace even on your busiest days.
- 2 Apples
- 1 tablespoon melted Coconut Oil
- 1 teaspoon Cinnamon
- 1/4 teaspoon Vanilla Extract
- 1 tablespoon Maple Syrup
- 1/2 cup Rolled Oats
- 2 tablespoons Chia Seeds
- 2 tablespoons Almond Butter
- 1 1/2 cups Dairy Free Milk – almond milk, cashew milk, coconut milk, etc.
Pour your oats into a jar and add almond butter, chia seeds, and milk. Mix until combined and cover with a lid to store in the refrigerator to sit overnight.
Next, preheat your oven to 350 degrees. Cut your apples into half inch chunks and spread the pieces on a baking dish. Melt coconut oil and stir in cinnamon and maple syrup. Pour the coconut oil mixture over the apples and bake for 35 minutes. Store the baked apples in a separate container in the refrigerator and serve as a topping to your oats.
