We have a new go-to lunch recipe for you. This nutrient-dense recipe is perfect for those days when you need something reliable and uncomplicated – something you won’t have to think too hard about and can eat time and time again. Made with kitchen staples, you can prep this ahead of time and have it on hand for those moments when you need something healthy and quick.
- 1 cup Romaine Lettuce
- 1/2 cup of Cucumber
- 1/2 cup Radish
- 1/4 cup Shredded Carrots
- Fresh Herbs of your choice – parsley, basil, cilantro, chives
- 1 cup Unsalted White Beans
- 2 tablespoons Tahini
- Salt and Pepper to taste
- 1/2 tsp Lemon Juice
- Salt and Pepper to taste
- 1 Gluten Free Tortilla
- 1/3 cup Hummus
Rinse your produce with our produce wash, water and vinegar to wash off any pesticides and residues. Chop your romaine and place it in a bowl. Depending on your preferred consistency, dice or shred your cucumber and radish and mix with the romaine. Add shredded carrots and any combination of loosely chopped herbs. Rinse and drain your canned white beans then add them to your mixture as well.
Toss your salad with tahini, salt, pepper, and squeeze with lemon. Wrap your salad in almond flour, cassava flour, or gluten free wrap of choice for a delicious lunch or easy on-the-go meal that will leave you satisfied and energized.
