Pickled onions are a clean way to add a lot of flavor and color to your plate. They are a delicious addition to salads and bowls, gluten-free avocado toast, tacos – you name it. You’ll Need:
1 glass jar with a lid
1 medium Red Onion, sliced
1/2 cup of hot Water
1/2 cup of Apple Cider Vinegar
1 tbsp of Whole Peppercorns
1 tsp Salt
1 tsp Maple Syrup (optional)
Add your sliced onions to the jar then pour the hot water and vinegar over the onions. Add the peppercorns, salt, and maple syrup.
A quick note: the maple syrup helps cut the strength of the vinegar. If you like the taste of vinegar or you want to opt for less sugar, you can leave this out.
Screw the lid onto the jar and give it a shake. Place the jar in the fridge overnight (or for at least 8 hours). You can store these in the refrigerator for up to three months.
