Banana Bread is a timeless comfort food. This baked oatmeal recipe is a great breakfast staple that you can prepare at the beginning of the week for an on the go snack or morning meal. It’s very easy to make and there’s a good chance you already have all the ingredients you need. This recipe is vegan but you can swap the flax seed for an egg, if you prefer.
2 cups Old Fashioned Rolled Oats/ Gluten Free Sprouted Rolled Oats
1 teaspoon Baking Powder
1 ½ teaspoons Cinnamon
½ teaspoon of Sea Salt
2 cups unsweetened Almond Milk
¼ cup of pure Maple Syrup
2 tablespoons melted Coconut Oil, plus 1 teaspoon for greasing the pan
2 teaspoons pure Vanilla Extract
3 ripe Bananas, mashed
1 cup of berries
½ cup Nuts of your choice, chopped
Preheat your oven to 375 degrees and grease a square baking dish with coconut oil. In a large bowl mix oats, baking powder, cinnamon, and salt. Add in the almond milk, maple syrup, flaxseed, coconut oil, vanilla, mashed bananas, berries and nuts. Bake for 50 minutes and let cool. Eat as is or serve with plant based yogurt and berries.
